Chorizo & Spinach Protein Pancakes

Ingredients (for the pancakes) 

  • 1 Scoop protein powder (motion nutrition coconut whey)
  • A handful of spinach
  • 2 large eggs
  • 25g chorizo
  • 25g red onions

Ingredients for cookings and topping

  • 1 tsp of oil (of choice or butter)
  • 20g greek feta
  • 1 Tbsp Pesto Mayo

Method

  • Blend together all the ingredients for the pancakes
  • Place a pan on the stove at low heat and when hot enough add the oil (or butter)
  • Place as much of the mixture on the pan depending on how big you would like your pancakes to be
  • Cook until lightly golden
  • Stack your pancakes on a plate and top with the Pesto May and greek feta
  • Enjoy
