Blueberry and Poppyseed Protein Pancakes




  • Vanilla protein powder (1 scoop)
  • Baking powder (1/2 tsp)
  • Coconut Flour (2 Tbsp)
  • 2 Handful blueberries (1 for going in mixture and 1 for serving)
  • Poppy-seeds (1 tsp)
  • Water (2 Tbsp)
  • Butter/Cocounut oil (for cooking)


  • Blend together all ingredients
  • Place pan on low heat on the stove top and place butter/coconut oil
  • Place as much of the mixture in to the pan (depending on how big you would like the pancakes to be)
  • Cook until bubbles begin to appear on the surface and then flip the pancake and cook until lightly golden
  • Serve with the remainder of the blueberries. I have added some honey and cinnamon on mine but you can top them with anything you like.
